More chocolate and less conflict

Somos gente acogedora, hospitalaria y divertida.

No cambiaría nada?

Lebanon is again in the news every day, and I want to downplay the issue (sorry)
Because things from outside are more serious than if you are on site. The problem is concentrated in specific areas of the country and most of the Lebanese continue with business as usual.

We are friendly, hospitable and funny people. But radicalism are bad. And make a border with a country at war too.

I sometimes wonder if in government meetings they would eat:

Would not change anything?

Because if it is possible to share a table with a lion ...  it will not be possible to do with people?

Happy Weekend!

Football and food ... a perfect combination!

Feliz semana!

I'm Still working, but in summer everything is different. The environment in which you work is more relaxed. You know, the night is extended, the beach and also a Gin&Tonic refresh you!

A different summer, because first I'm having the opportunity to work in an environment very different from what I'm used to do and it is very very positive experience and second thing is because I'm not with my family: (

And yesterday I realized again that there are days when I miss the routine of winter, especially when make football. It has already started the league and Barça played yesterday. And more than the game itself, also, I missed our daily football routine at home. It is quite an event, the preparations and the match itself.
My kids with Barça shirt, previous  nerves, the TV and radio playing , and with equal importance, the table with the "tortilla de patatas", bread with tomato, chorizo, Jamon, and beer .... amazing!!

....Anywhere I feel like home

For fans of Barça congratulations on the win! For those of Madrid ...sorry ... lol. Good luck for the rest the of league!

So I only have one and a half month to complete the work at sea and return to the routine, I will make the most!

Happy week!

I am Lebanese!!

I'm not in Lebanon I'm working out of Beirut, and the news of the country don't are good news.
I don't want go into evaluating and judging it. The political landscape is unstable, more if possible.

Two days ago, an Air France plain did not land in Beirut for security reasons.
Arab embassies have asked their citizens to leave the country.

And another summer that we don't have tourists.
Because Lebanon is a country that receives a millions of tourists from the Arab world, as it is one of the few countries in the Arab world freely, with history with a cheerful and friendly people, with plenty of attractions to come. Including food.

I just hope that everything returns to normal and we Lebanese can enjoy our country and still be proud to say I'm Lebanese.

Two days in Turkey

Feliz semana!

Chef Paul Haddad!

------------------------------------------------------------------------------------------------------
This is the first time I'm in Turkey, Marmaris and Bodrum specifically, two islands in the southwest.
It is the meeting place between the Mediterranean and the Aegean Sea.

The truth is that they resemble the Greek islands and I'm looking forward to spending more time on them, but I can only enjoy a few hours each.

Of course, I bought a honey pot because a friend said me it is especially good. I'll Try it at home.

I ate a iskender Kebab, a dish typical of Turkey it is served of lamb sheets on a base of bread, with yogurt, chile sauce and butter. Great!

And also a kind of pizza they call Pide. As you will see an oval shape and extra flat. It is also extra spicy!

This week I will be able to enjoy these islands another time, even for a few hours.

Happy Week!

Two days in Greece

Esta vez he visitado Mikonos y Rodas.

Chef Paul Haddad
--------------------------------------------------------------------------------------------------------------------------

Not is the first time I've been to Greek islands. But still, I always like to come.

This time I visited Mykonos and Rhodes.

Mykonos stands out for it's beautiful narrow  and labyrinthine streets, with picturesque houses and flowers from their balconies. All in an idyllic beach with crystal clear water.

Rhodes is a medieval town full of history which for the short time I've had I couldn't visit all, bearing in mind that I had to stop to eat. It was here that I ordered the salad more typical of Greece, the horiatiki salad .

As I am working and I haven't all the time I like, I have taken to make one of the things I like, eat. (hahahaha)

I feel very comfortable and identified with the Greek food. Reminds me of the lebanese gastronomy. They are still the two Mediterranean. It has touches of the Arab region and Balkan.

The most ingredients that they being used are the olive oil, eggplant, feta cheese, grilled meats, etc ...

I Know is typical but I prefer the mussaka, which is the antecedent of the lasagna. Where used instead pasta for eggplant to separate the layers of meat.

Besides the food, I liked the joy with living Greeks, despite the deep crisis that they are living.
I hope to come back and continue to enjoy the islands and people who make you feel at home.

I hope that you spend a good week!

Recycling on board

Chef Paul Haddad

--------------------------------------------------------------------------------------------------------------------------------

Today I will talk about recycling on board a cruise.
This is a serious and aware theme.

As you can imagine the amount of trash tons are counted in one day.
Everything has a specific space.

The cruise has an area dedicated to recycling everything that can be recycled on board is done and the rest on arrival in port is taken to the recycling point of the various ports.

So far, the normal and which I imagined. But I did not know, I also have heard that is a policy in almost every cruise is that organic waste is food waste is thrown into the sea, so that marine animals will eat them.

It already beginning to address the waiters to clear the dishes from the table. They make the first split, take care of gathering all the food scraps to be thrown into the sea. Then in the kitchen is reviewed and finally opens a gate and thrown into the sea.

It also has a purifying waste water, which all the water the boat is safe.

The motto of this company is: Reduce, Reuse and Recycle

I'll keep on board a little longer and I'll explain a bit more about my experience!

The team on a cruise, watch parts perfectly geared!

Me expresé mal.

Chef Paul Haddad.

-------------------------------------------------------------------------------------------------------------------------------

In the previous blog, I explained that I embarked on a yacht again.
I'm misspoke. It's a cruise. Although smaller than normal because it is a luxury cruise, exclusive.

300 passengers traveling on board ready to enjoy all that is offered.
Also, of course, of food.

Here entering my job. The company wants to exquisite cuisine, gastro as possible, and that is what we are changing. Although the site has some limitations we got it.

On board are three buffets, and lunch and dinner in restaurant service.
The rhythm of the kitchen is hectic.
Although the logistics is different from a restaurant.

In the kitchen hierarchies are far apart. It's all done in separate groups, with different chefs and finally end it together.
There are cooks for all items and each item with their leader and in the same time they have boss
It is a gear that works perfectly.
There is no room for mistakes.

In these five days, I'm happy. I have direct contact with the cruisers passengers (many repeaters) and have noticed a positive change in food.
I hope to continue improving this string in the kitchen and bring to a kitchen more "intimate" under squad and I say this without wanting to detract from anyone, because I realized how difficult it is to unify all this gear for cooks, chief , top, waiter ...

At the moment I'm here a few weeks and I'll try to enjoy and learn from this new challenge to the max!

Next week I will tell you what has amazed me how recycling in cruises.

Enjoy the weekend!

This year in August I'm also working!

He vuelto a mi tierra con mi familia.
Me he rencontrado con viejos amigos y he hecho nuevos.

Chef Paul Haddad
----------------------------------------------------------------------------------------------------------------------
I'm here again with frantic pace!

And I turn on board two and half months to work on a yacht. Perhaps I will take love to the sea ...
It is the first year that I will not get a vacation. It appears that August is year to take stock, right?

Well, mine can not be beat.
I returned to my homeland with my family.
I rencontrado with old friends and I made new ones.
But the most satisfying is that I work with what I enjoy it in the life, the gastronomy.

My land has restored my expectation that sometimes gets lost with the routine and monotony.
I hope you find yourselves with the opportunity I had. And you take all the oportunities that are presented to you. Sometimes are difficult but I try it, yes.
In this new adventure I'm not going to leave to write the blog, it is still active in August, as I do.

On Friday I will explain you a little of my work on the high seas!

Como prevenir trastornos digestivos en verano //How to prevent digestive problems in summer

Chef Paul Haddad
.............................................................................................................................................

If we ask people for their favorite season, would surely tell us the summer.
Me too, holidays, sun, heat ...

But it is time to digestive disorders. We have to take special care when treating food. With the heat the food develop with easiest way harmful microorganisms for us.

The best known are the salmonella, but exist millions of them.
Some of them are easier to prevent with some measures of hygiene, preservation and handling of food.

The World Health Organization has made a list of the main reasons why food can develop a microorganism.
Here I leave you:

1. Inadequate cooling (greater than 5 º C), food storage containers or food left at room temperature. Interval of several hours between preparation and consumption of food.
2. Undercooking.
3. Conservation in inadequate heat on less than 60 ° C.
4. Food handling by infected persons.
5. Use of raw contaminated food.
6. Contamination (raw food, cooked food)
7. Lack of cleaning of equipment and utensils.
8. Fruits and vegetables irrigated with water contaminated by animal manure or human sewage.
9. Consumption of raw animal foods are most likely to be contaminated (beef, chicken, eggs, seafood and unpasteurized milk).

After bear in mind the above, you just have to worry about enjoy!
Although some of us don't are actually on vacation ...

I want to tell you that next week I can not write the blog because most of people stay in holidays and others have to be working and I can not devote enough time.

Have a great week!!!

Chef Paul Haddad

San Miguel 0,0 has choosen one of the best adverts from my own opinion, with a very special message! Excellent advert!

The World is going crazy but little by little could get a bit better...don´t you think! San Miguel has choosen the Star Pau Gassol to remind us that if we go out to a restaurant, we order our meal usually we don´t eat it all, we should ask for a "doggy bag", so we can take it home and have it for dinner...!

Going to work on a bicicle apart from being good for you is also really good for a Green Planet!

I prefer the part were it says...we should take the rest of a meal in a restaurant due to the fact that if we all knew the massive amount that a restaurant has to throw away in a day you would not beleive it!

As we mentioned at the begining of our today´s blog, the message is clear, step by step, little by little, with so many little things we can make a better world!! When you do it you actually feel much, much better...! Try it!!!!

Have a great week!

Que comen los cocineros? // What chefs eat?

Chef Paul Haddad
-------------------------------------------------------------------------------------------------------------------------------

Finally Friday!

Some of you already know that these days I'm home alone, I have my family on holidays.

And I have to cook at home!
With my family away I have no other choice (I confess that some of my mother's tupperware are here), also friends many take the opportunity to invite me at home to dinner.
And always leaves the big question: what chefs eat?
When you arrive at the house in question, the woman who has always cooked excuse that his dishes are not nearly as my house or my kitchen and I think that my wife and her kitchen almost nonexistent ... . (today my wife kills me .. lol), but the truth is that if the product is good, anything is good to me.

One of the essentials for eating a chef is only a quality product. At least I speak for myself, I always say that if you eat a cheese sandwich, the only thing to be is that the cheese is good and fresh bread.

Have a nice weekend full of succulent food!

Chef Paul Haddad

------------------------------------------------------------------------------------------------------------------------

Good morning!

We are in weddings seasons. And Gastronomic Talent have released in this area.

Here in Lebanon, unlike the custom in Spain is that the food is served in buffet. It is also customary to serve an appetizer before dinner, which often depends on the economic potential of the couple.
For the kitchen, I have to say it is much easier to serve a buffet because it lets you work more efficiently.

Since you can control and prepare the times without the stress that all guests have to be served at the time.
The two weddings that served Gastronomic Talent have been very different. A 100% Arabic and the other Arab, West and East combined.

I'm happy, because the two have done a good job in the opinion of the couple and this for a Chef is the most rewarding.
Here you have some photos of some corner of the buffets

Y mejor impresión no he podido tener.

How pass the days! ... It's Friday again.

A week ago was still on the yacht of one of the most influential person of Lebanon. I can not tell the name or show the pictures of the yacht or the dishes I prepared for VIP guests to maintain their privacy.

Is the first time that I work for someone like him.
And best impression I couldn't have.
As I like to know that depending on money and power that some people still maintain their humility.
I have been amazed treatment to the staff. Great!.
It was not the first time I boarded a boat, but the first I worked on it. I learned from this experience ... special logistics required, the protocol of the kitchen utensils used ....

Many of you asked me about of dizziness, as in the other post I said it. Well, yes me dizzied. Although only one night and I think all the persons in the yatch was dizzied. That wave! Thanks for all the messages you sent me.

I'm sorry that I can't to explain so much. I have the feeling that I speak without speaking, but I hope you understand me.

I was very pleased with the work I've done, the dishes I prepared.
Flavors of always with a touch of fusion and modern presentation.
I really liked the fact that they asked me the recipes.
But the best thing is that when I said goodbye they congratulated for my work. Could be better?
In my case, no.

Have a great weekend!!!
