This year in August I'm also working!

Ya estoy aquí de nuevo con ritmo frenético!
Y es que me vuelvo a embarcar dos meses y medio en un yate para trabajar. Al final le voy a coger cariño a la mar...y eso que lo de los mareos me lleva camino de la amargura.

Es el primer año que no voy a tener vacaciones. Parece que en agosto es año de hacer balance, verdad?
Pues el mío no puede ser mejor.
He vuelto a mi tierra con mi familia.
Me he rencontrado con viejos amigos y he hecho nuevos.
Pero lo más satisfactorio es que sigo trabajando con lo que más disfruto, la gastronomía.

Mi tierra me ha devuelto la ilusión que a veces se pierde con la rutina y monotonía.
Espero que vosotros os encontréis con la oportunidad que he tenido yo.
Y que cogáis todos los trenes que se os presenten.
Yo lo intento, eso sí, biodramina en mano.

En esta nueva aventura no os voy a abandonar, el blog seguirá activo en agosto, como yo.

Para los que esta sea su última semana de trabajo, espero que disfrutéis al máximo de vuestras vacaciones! Y para los que como yo seguimos activos, lo hagáis con la mayor ilusión!

El viernes os explicaré un poco de mi trabajo en alta mar!

And I turn on board two and half months to work on a yacht. Perhaps I will take love to the sea ...
It is the first year that I will not get a vacation. It appears that August is year to take stock, right?


Well, mine can not be beat.
I returned to my homeland with my family.
I rencontrado with old friends and I made new ones.
But the most satisfying is that I work with what I enjoy it in the life, the gastronomy.

My land has restored my expectation that sometimes gets lost with the routine and monotony.
I hope you find yourselves with the opportunity I had. And you take all the oportunities that are presented to you. Sometimes are difficult but I try it, yes.
In this new adventure I'm not going to leave to write the blog, it is still active in August, as I do.


On Friday I will explain you a little of my work on the high seas!

Como prevenir trastornos digestivos en verano //How to prevent digestive problems in summer

Si le preguntáramos a la gente por su estación preferida, seguramente nos dirían el verano. 
Yo también, vacaciones, sol, calor...


Pero es época de trastornos digestivos. Tenemos que tener un cuidado especial a la hora de tratar los alimentos. Con el calor los alimentos desarrollan de una manera más fácil microorganismos perjudiciales para nosotros. 


Los más conocidos son la salmonela, pero hay millones. Algunos de ellos es más fácil de prevenirlos con algunas medidas de higiene, conservación y manipulación de los alimentos. 


La Organización Mundial de la Salud ha hecho un listado de las causas principales por las cuales un alimento puede desarrollar un microorganismo y por lo tanto sentarte mal.
Aquí os la dejo:


1. Refrigeración inadecuada (mayor de 5ºc), conservación de alimentos en recipientes muy grandes o alimentos dejados a temperatura ambiente. Intervalo de varias horas entre preparación y consumo de los alimentos. 
2. Cocción insuficiente, es decir, servir alimentos semi crudos. 
3. Conservación en caliente a temperatura inadecuada menor de 60ºC.
4. Manipulación de alimentos por personas infectadas. 
5. Uso de alimentos crudos contaminados. 
6. Contaminación cruzada (alimento crudo-alimento cocido)
7. Falta de limpieza del equipo y utensilios de cocina.
8. Frutas y verduras regadas con aguas contaminadas por estiércol de animales o alcantarillado humano. 
9. Consumo de alimentos crudos de origen animal son los que tienen más probabilidad de estar contaminados (carnes de vacuno, pollo, huevos, mariscos y leches no pasteurizadas).


Después de tener en cuenta estos consejos, sólo hay que preocuparnos de disfrutar! 
Aunque para algunos de nosotros aún nos quede bastante para poder estar de vacaciones...


Aprovecho para deciros que la semana que viene no podré escribir el blog, ya que al estar muchos de vacaciones, otros tenemos que estar trabajando y no podré dedicar el tiempo suficiente.

9. Consumption of raw animal foods are most likely to be contaminated (beef, chicken, eggs, seafood and unpasteurized milk).

Although some of us don't are actually on vacation ...

Pequeños gestos para un mundo mayor // Paul Gassol advertisement

Esta es la frase con la que cerveza San Miguel 0,0 ha escogido para su nuevo anuncio.
Un buen anuncio.

Y es que el mundo va mal, y con pequeños gestos como éste podría ir mejor.
San Miguel aprovecha la figura de Paul Gassol para recordarnos que si vamos a un restaurante a comer y nos sobra comida, la pidamos para llevar, y así tendremos para la cena.

Que ir en bicicleta al trabajo, a parte de ser un ejercicio beneficioso para nuestro cuerpo, es aún mejor para el planeta.

Yo me quedo con la parte de pedir la comida que sobra para llevar, ya que la cantidad que tiramos en un restaurante os dolería de verdad si os lo tradujera en Kgr.



Ya sabéis, seamos solidarios, que con estos pequeños gestos  a parte de fomentar la solidaridad, abriremos los ojos con respecto a las necesidades prioritarias que en este momento padecen tantas personas¡¡  No cuesta nada colaborar. Nosotros que afortunadamente podemos, nos sentiremos mucho mejor con nosotros mismos y de manera sencilla.

San Miguel 0,0 has choosen one of the best adverts from my own opinion, with a very special message! Excellent advert!

The World is going crazy but little by little could get a bit better...don´t you think! San Miguel has choosen the Star Pau Gassol to remind us that if we go out to a restaurant, we order our meal usually we don´t eat it all, we should ask for a "doggy bag", so we can take it home and have it for dinner...!  

Going to work on a bicicle apart from being good for you is also really good for a Green Planet!

I prefer the part were it says...we should take the rest of a meal in a restaurant due to the fact that if we all knew the massive amount that a restaurant has to throw away in a day you would not beleive it!

As we mentioned at the begining of our today´s blog, the message is clear, step by step, little by little, with so many little things we can make a better world!! When you do it you actually feel much, much better...! Try it!!!!

Que comen los cocineros? // What chefs eat?

Por fin viernes!! 

Algunos de vosotros ya sabéis que estos días en casa estoy sólo, tengo a mi familia de vacaciones. 
Y en todas las profesiones es aplicable lo de: " en casa de el herrero, cuchillo de palo."
Y en mi caso y en el de casi todos mis amigos cocineros es cierto.  En casa, no entramos en la cocina.

Aunque con mi familia lejos no me queda otro remedio (confieso que algún tupper de mi madre está por aquí), además muchos conocidos aprovechan la ocasión para invitarte a su casa a cenar. 
Y siempre sale la pregunta del millón: ¿que comen los cocineros? Cuando llegas a la casa en cuestión, la mujer que ha cocinado siempre se excusa de que sus platos que ni de lejos estarán como los de mi casa o los de mi cocina y yo que pienso en mi mujer y su cocina casi inexistente....(hoy si me mata..jajaja), pero la verdad es que si el producto es bueno, cualquier cosa me está buena. 


Uno de los elementos imprescindibles para que coma un chef, no es más que un producto de calidad. Al menos hablo por mi mismo, yo siempre digo que aunque comas un bocadillo de queso, lo único que debe ser es, que el queso sea bueno y el pan reciente. 

Así es que ya lo sabéis, con un bocadillo de queso me conformo!! jajajaja....

Que tengáis un buen fin de semana lleno de comidas suculentas!

Finally Friday!

Some of you already know that these days I'm home alone, I have my family on holidays.

And I have to cook at home!
With my family away I have no other choice (I confess that some of my mother's tupperware are here), also friends many take the opportunity to invite me at home to dinner.
And always leaves the big question: what chefs eat?
When you arrive at the house in question, the woman who has always cooked excuse that his dishes are not nearly as my house or my kitchen and I think that my wife and her kitchen almost nonexistent ... . (today my wife kills me .. lol), but the truth is that if the product is good, anything is good to me.

One of the essentials for eating a chef is only a quality product. At least I speak for myself, I always say that if you eat a cheese sandwich, the only thing to be is that the cheese is good and fresh bread.

Nos hemos ido de boda// We went wedding

Buenos días!

Ya estamos en plena temporada de bodas. Y Gastronomic Talent por primera vez se ha estrenado en este terreno.

Aquí en Líbano, la costumbre a diferencia que en España es que la comida se sirve en buffet.
También es habitual servir un aperitivo antes de la comida, que depende muchas veces de las posibilidades económicas de los novios.

Para la cocina, he de decir que es mucho más cómodo servir un buffet que un set menu (un camarero te sirve el menu) porque te permite trabajar con más eficiencia. Dado que, puedes controlar y preparar los tiempos sin el stress de que todos los invitados tienen que estar servidos al momento.

Las dos bodas que a servido Gastronomic Talent han sido bien distintas. Una 100% árabe y la otra árabe, occidental y oriental combinadas.

Estoy contento, ya que en las dos hemos hecho un buen trabajo según la opinión de los novios y esto para un Chef es lo más gratificante.

Good morning!

We are in weddings seasons. And Gastronomic Talent have released in this area.

Here in Lebanon, unlike the custom in Spain is that the food is served in buffet. It is also customary to serve an appetizer before dinner, which often depends on the economic potential of the couple.
For the kitchen, I have to say it is much easier to serve a buffet because it lets you work more efficiently.


Since you can control and prepare the times without the stress that all guests have to be served at the time.
The two weddings that served Gastronomic Talent have been very different. A 100% Arabic and the other Arab, West and East combined.


I'm happy, because the two have done a good job in the opinion of the couple and this for a Chef is the most rewarding.

Un poquito más // A bit more

Como pasan los días...ya es viernes de nuevo.

Hace una semana todavía estaba en el yate de una de las personas más influyentes del Líbano. No puedo deciros el nombre, ni enseñaros fotos del yate ni de los platos que preparé para sus invitados VIP, para mantener su privacidad.

Es la primera vez, que trabajo para alguien como él.
Y mejor impresión no he podido tener.
Como me gusta saber que dependiendo del dinero y del poder que tienen algunas personas siguen manteniendo su humildad.
Me he quedado sorprendido del trato hacia el staff. Que lujo.
Seguro que por eso esta donde está.

No era la primera vez que subía a un barco, pero sí la primera que trabajaba en él. Como se aprende de todas las experiencias...la logística especial que se necesita,el protocolo de la cocina, los utensilios utilizados....

Muchos de vosotros me habéis preguntado por lo de los mareos, ya que en el otro post lo dije. Pues bien, sí me maree. Aunque sólo una noche y creo que todos nos mareamos. Que olas!! Gracias por todos los mensajes que me habéis enviado.

Me sabe muy mal el no poder dar más detalles. Tengo la sensación que hablo sin hablar, pero espero que me entendáis.

Me he quedado muy satisfecho con el trabajo que he hecho, los platos que he elaborado.
Sabores de toda la vida con toques de fusión y una presentación moderna.
Me gusto mucho el hecho que me pidieran las recetas.
Pero lo mejor, es que al despedirte de un sitio te feliciten por el trabajo realizado. Puede haber algo mejor?

En mi caso, no.

How pass the days! ... It's Friday again.

A week ago was still on the yacht of one of the most influential person of Lebanon. I can not tell the name or show the pictures of the yacht or the dishes I prepared for VIP guests to maintain their privacy.

Is the first time that I work for someone like him.
And best impression I couldn't have.
As I like to know that depending on money and power that some people still maintain their humility.
I have been amazed treatment to the staff. Great!.
It was not the first time I boarded a boat, but the first I worked on it. I learned from this experience ... special logistics required, the protocol of the kitchen utensils used ....

Many of you asked me about of dizziness, as in the other post I said it. Well, yes me dizzied. Although only one night and I think all the persons in the yatch was dizzied. That wave! Thanks for all the messages you sent me.

I'm sorry that I can't to explain so much. I have the feeling that I speak without speaking, but I hope you understand me.

I was very pleased with the work I've done, the dishes I prepared.
Flavors of always with a touch of fusion and modern presentation.
I really liked the fact that they asked me the recipes.
But the best thing is that when I said goodbye they congratulated for my work. Could be better?
In my case, no.

De camino...// On route

Ya estoy de camino de la partida. 
Creo que será el último momento de tranquilidad en 6 días. 

Estoy sentado en una cafetería dentro del aeropuerto de Atenas esperando mi vuelo a Corfú y en cuanto he entrado en busca de un café desesperadamente, a empezado a sonar uno de mis grupos favoritos. Cold play, y aquí os dejo  la canción que sonaba...me ha echo sentir en casa.


Me dará suerte? Me encontraré el As de trébol en la manga? 

Ya os contaré...si es que encuentro un momento para abrir el ordenador.

Espero que tengáis una buena semana y que sea igual de emocionante que para mi.

Mi partida de poker //My poker game

Semana intensa.
Y la que me espera, más! 

Suerte que ya está aquí el fin de semana, para recargar pilas. 

A partir del lunes juego una partida de poker.
Sin cartas.
Con gastronomía.


A veces se gana, otras se pierde. 
Siempre se intenta.

El juego cambia. 
Pero nunca termina. 

No puedo adelantaros mucho. 
Dicen que trae mala suerte. 

De momento os adelanto que estaré toda la semana que viene fuera. 


Espero encontrarme con el As de trébol de camino.

Ilusión, curiosidad.
Reto, quimera.

En 8 días estaré de vuelta.

Unos paisajes con comida espectaculares!! // Spectacular landscapes with food

Que peligro tienen los retos entre amigos...

Os explico para que entendáis el post de hoy. 
Hace una semana estuve cenando con un amigo pastelero, y claro, siempre estamos con la eterna rivalidad como si del fútbol estuviéramos hablando. Siempre surge la misma pregunta: ¿ quién es más artista ?  ¿un cocinero o un pastelero ?

Pues bien, en el último encuentro la cosa fue a más, jajaja. Tengo un reto. Sin querer me vi aceptando algo que en mi vida he hecho. Esculpir algo de comida...SOS! jajjaja.
Yo lo único que he esculpido hasta el momento (nunca es tarde) son las cestitas con la piel de las naranjas para mis hijos, o bien una flor con una sandía. A partir de aquí...más nada. 

Lo primero que hice es recurrir al santo Google intentando encontrar un poderoso tutorial de como esculpir comida. 
Pues bien, me encontré con chuladas como éstas:

(me ha fascinado el agua de jamón!)


Estas maravillas las elaboró el fotógrafo Carl Warner para un proyecto llamado "foodscape" y sólo con elementos culinarios ha creado estos increíbles paisajes. 

Para mi reto no me sirven, pero no quería dejar de compartirlos. Esto si que es arte!

Make challenges with friends, is dangerous ...!

I explain you to understand today's post.
Las week I had dinner with a friend baker, and of course we are always with the eternal rivalry as if we were talking football. Always the same question arises: who is more an artist? A cooker or a baker?

Well, in the last meeting, things goes more, lol. I have a challenge. 
Without wishing I was accepting something that in my life, I never had done. Sculpting some food ... SOS! jajjaja.
The only thing I've carved so far (never late) are the baskets with the skin of oranges for my children, or a flower with a watermelon. From here ... more nothing.

First thing I made was go to the holy Google trying to find a tutorial for show me how can I sculpt
food
Well, I found these marvels:

The photographer Carl Warner developed these marvels for a project called "foodscapes" and only with a culinary elements has created these incredible landscapes!

Hasta pronto Embajador!! // See you soon Ambassador!!

Ayer fue la fiesta de despedida del embajador español en Líbano...


He tenido la suerte de coincidir con él en 4 ocasiones, y diréis...que pocas! pues os diré que me han bastado para tenerle aprecio. 
Me ha parecido un embajador impecable de la cultura española en Líbano. 
Se ha dejado la piel y el tiempo, en dar a conocer las tradiciones, costumbres, folclore de un país. España ha estado presente en los máximos y distintos actos. 
Que se puede pedir más a un embajador? 



En un primer momento, cuando te hablan del embajador, piensas en una persona enfundada en traje y trato distante. Hasta que lo conoces. 
Persona cercana, risueña, amable, y con un don de gentes sin límite. Así es el Sr. Juan Carlos Gafo.


Para los que seguís el blog, sabréis mi poca habilidad con las fotos (la cámara tampoco lo pone fácil), pero ayer directamente me la olvidé. Eso sí, me llevé el jamonero, que no falte! jajaja...pero lo de las fotos, quizás en otra vida me decida a tomármelo en serio. 
Una pena, porque quedaron gracias a cámaras de ajenos, un montón de imágenes inmortalizadas de las cuales yo no tendré.. y no os puedo enseñar.


Ayer hubo mucha gente, de todos lo ámbitos. Una mezcla increíble de personas. Y esto demuestra, que se ha movido por todos los ambientes, no sólo entre grandes despachos y corbatas. Y personalmente, ésto me gusta.


Falta por contaros, que ayer todos nosotros pudimos saborear tapas de lo más español, Jamón ibérico al corte ( con mi arte...jajajaja), spanish quesos, sangría...por supuesto todos los productos de Spanish Gourmet Lebanon.


Ahora nos toca esperar a la próxima embajadora destinada aquí en Beirut.


Mientras tanto a disfrutar del fin de semana....!

Yesterday was the farewell party of the Spanish ambassador in Lebanon ...


I've been fortunate to coinciding with it 4 times and say ... that few! for I say I have enough to keep him appreciation.
It seemed a perfect ambassador of Spanish culture here.
He has worked to publicize the traditions, customs, folklore of a country. Spain has been present in the highest and various events.
What more could you want an ambassador?


                                          


At first, when you talk ambassador's think of a person clad in suit and distant treatment. Until you meet him.
Someone close, smiling, friendly, and people skills with no limit. So is Mr.Juan Carlos Gafo.


For those who follow the blog, you know my little skill with the photos (the camera also makes it easy), but yesterday I forgot it directly. Of course, I took the cutter ham, I don't miss it! hahaha ... but the photos, maybe in another life I decided to take it seriously.
A pity, because photos were due to others, a lot of images immortalized of which I will not have .. and I can't show you.


Yesterday there were many people in all the areas. An incredible mix of people. And this shows, that has been moved by all environments, not only between large firms and ties. And personally, I like this.


It remains to tell that yesterday all we could taste as Spanish tapas, Slicing Iberian ham (with my art ... hahaha), spanish cheeses, sangria ... of course all the products were from Spanish Gourmet Lebanon.


Now we wait for the next Ambassador destined here in Beirut.

Un hummus diferente // A different hummus

Buenos dias! 


El Hummus es uno de los platos de la cocina libanesa más conocidos en el mundo. Pero hace algún tiempo, hablando con un amigo cocinero también, nos quejábamos de la poca fusión que había dentro de nuestra cocina y particularmente con el hummus. 


Pues esto ya está cambiando...Y OLÉ!


Porque el mundo cambia, gira y gira y nos tenemos que amoldar a él. 


Pues bien, el sábado fui a cenar al restaurante Babel (Beirut), y me gustó, me gustó mucho. El ambiente es muy agradable, la decoración original y los platos más! La creatividad se respira.
Ambientado en un castillo de Babilonia el cual te seducirá.


No hay nada que te deje indiferente y eso me gusta. Luego como el paladar es subjetivo, te gustará o no, pero desde luego no te deja No-feeling. Y eso para un negocio es importantísimo. 


Encontrarás todos los clásicos de la "mezza" libanesa a parte de otros platos de igual importancia, donde cada uno de ellos guarda su orígen, su raíz pero llenos de toques diferentes. 


El Hummus que probé, estava compuesto de garbanzos, crema de sésamo y crema de chile picante. Además de darle un sabor intenso lo deja con chispas de color rosa. Divertido! 


Por otras vías soy asiduo al hummus con guacamole, hummus con calabaza, hummus con pimiento rojo asado... y un sinfín de buenísimos hummus! 






Si queréis la receta original pincha aquí. Y para darle un toque, solo añadir un ingrediente que os guste. Antes de introducirlo, si es crudo, hervirlo y triturarlo.

Good morning! 


The Hummus is one of the Lebanese cuisine best known in the world. 
But for some time, talking to a friend cook too, we complained about the lack of fusion was inside our kitchen and particularly with the hummus. 


But this is changing ... and Ole! 
Because the world changes, turns and turns and we have to mold him.


Well, Saturday I went to dinner at the restaurant Babel (Beirut), and I liked, I liked it. 
The atmosphere is very nice, original decor and the dishes!. You can breathe creativity. 
Set in a castle of Babylon which will seduce you. There is nothing to leave you indifferent and I like that. 
Then, the taste is subjective, you will like it or not, but certainly will not let you "No-feeling". And that is important for a business. 


You'll find all the classics of "mezza" Lebanese dishes from other equally important, where each ones keeps its origin, but filled with different accents. 


I tried the Hummus, it composed of chickpeas, sesame cream and chile cream sauce. Besides giving an intense flavor leaves the dish with pink sparks. Fun! 


In other ways I am a regular at the hummus... with guacamole, with pumpkin,  with roasted red pepper  ... and a lot of good hummus!





If you want the original recipe click here.. And to give it a different flavor, just add an ingredient that you like. Before introducing it, if is crude, boiled it and crush it.
