No conscience !!



 Ayer me topé con este texto :

"Una de las más tristes realidades es que la gente nunca sabe cuando sus vidas han llegado a lo más alto. Sólo después de que se ha terminado y tenemos algún tipo de perspectiva nos damos cuenta de lo bien que nos lo pasamos hace un día, un mes o hace cinco años. El caminar juntos en la nieve de diciembre, la llamada telefónica que cambió todo, aquella velada en el bar... Yo lo llevo a mi terreno. 

Cuantas veces has comido sin saborear? 
Sin detenerte a oler? 
Sin consciencia de tragar? 

....demasiadas, como casi todos. 
(shhht!! un secreto nuestro cerebro necesita veinte minutos para asimilar que nuestro estómago está lleno, si comes en diez seguirás teniendo hambre! )

How often did you eat without tasting?
Without stopping to smell?
Without consciousness to swallow?

too much! .... as almost everyone.

(shhh!! A secret: our brain needs twenty minutes to assimilate that our stomach is full, if you eat in ten minutes you will still have hungry!)

A cake..yes just one!! // Un bizcocho..solo uno!

As I wrote last week we are what we eat ... but that does not mean that "nobody never wants a sweet."

But the problem is that when you get into the kitchen to cook some sweet recipes are designed to have kilos and kilos of cookies in one afternoon ... and then what happens? in one week you are eating these cookies or muffins or cupcakes .... right?
Conclusion ...is better no cook our sweet ... our weight will thank you!

So today I bring you a super recipe for a cookie-cake for one person. That is the ingredients for only one person. And is very very easy to do it!
Ideal for an afternoon at home (only one dose for a sweet afternoon!)

Como escribía la semana pasada somos lo que comemos...pero eso no quita que a "nadie le amarga un dulce".

Pero el problema es que cuando te metes en la cocina para cocinar algún dulce las recetas están ideadas para que tengas kilos y kilos de galletas en una tarde...y luego que pasa? que estas una semana comiendo galletas, o madalenas o cupcakes....verdad? 
Conclusión ...mejor no cocinemos dulces que luego nuestro culo no nos lo agradece. 

Así es que hoy os traigo una super receta de un mini bizcocho para una persona. Es decir los ingredientes sólo son para una persona. 
Ideal para una tarde de casa (solo para una dosis de una dulce tarde!)

We are what we eat.. /Somos lo que comemos...


Each food we eat gives us energy and specific properties, each food has a function in our body.
Is something well known and studied by all but every day applies less ... For lack of time? by laziness?Now, in our daily life is more difficult be working in the kitchen cooking all morning.

Our diet directly affects our emotional and physical state. But every time we eat less fresh products and more canned and pre-cooked and without stopping to think about all the chemicals products we ingest with them. And every one of them affect us negatively on our health!
But is the lack of time is pushing us to go on? or is the unconsciousness?

We should pay more attention to how we eat, because not always eat it mean feeding... and we are what we eat.

Cada alimento que ingerimos nos aporta una energía y propiedades específicas, cada alimento tiene una función en nuestro cuerpo. 
Es algo sabido y estudiado por todos pero cada día se aplica menos...Por falta de tiempo? por pereza? En nuestro día a día es complicado meterse en la cocina toda la mañana para cocinar. 

Nuestra dieta afecta directamente a nuestro estado emocional y físico. Pero cada vez comemos menos productos frescos y más pre-cocinados y enlatados sin pararnos a pensar en todos los productos químicos que ingerimos con ellos. Y todos y cada uno de ellos nos afectan negativamente en nuestra salud! 
Pero es la falta de tiempo que nos empuja a seguir así? La inconsciencia? 

Tendríamos que prestar más atención de como nos alimentamos, porque NO siempre comer significa alimentarse....y es que somos lo que comemos.

A tequila please!!

Who has not encountered a chili or hot pepper in their life?
What we all do? Drink water, right?
Nooo! Wroong!!
Because these food are composed of properties which are not water soluble.
But yes with alcohol ... no, I'm not talking about the 5º of a beer, no.
These properties are removed starting from the 40º
You have to resort to tequila!
(besides than calm the itching, you ensure a fun night)


But if you don't want to wake up with a headache, you can also use milk or bread because their proteins also carry oils seeds of a spicy tongue.

Y quien no se ha topado con un chile o pimiento picante en su vida?
Y que hacemos todos? Recurrir al agua!
 Maal!! 
Ya que estos alimentos están compuestos por unas propiedades que no son solubles al agua. 
Pero si lo son al alcohol...no, no estoy hablando de los 5º de una cerveza, no. 
Estas propiedades se eliminan a partir de los 40º...
Tenéis que recurrir al tequila!! 
(aparte de calmar el picazón, te aseguras una noche divertida)

Pero si no quieres levantarte con dolor de cabeza, también puedes recurrir a la leche o al pan, ya que sus proteínas también arrastran los aceites de las semillas del picante de la lengua.

Back to the origin... to the land.




Three years ago, when we were on vacation to Lebanon we went a field trip. We were hungry ... sooooo hungry, and we were in a place where there was nothing at all!
We found a "snack" thinking of buying a chips.
For the snack in question you wouldn't give a penny ... really. Hence, we thought it best to just buy chips ...
And how appearances are deceiving?
So it has become our "Restaurant-Snack" favorite!
No name, no tablecloths, no waiters, no nothing ...
The secret? Not having chips potatoes but it has a vegetable garden, boot the potatoes of land and having to peel, chop and fry at the moment for you!
And the same happens with all of its products, vegetables, fruits ... and chickens too!
Dishes full of consciousness, flavor, color
but especially with an amazing flavor!


There are many restaurants that are beginning to grow your own food.

Their own orchards.
That great idea!

Hace 3 años, cuando veníamos de vacaciones a Líbano fuimos de excursión. Y teníamos hambre...muuucha hambre, pero estábamos donde Dios perdió las zapatillas. 
Paramos en un "chiringuito" pensando en comprar unas chips. 
Por el chiringuito en cuestión no daríais ni un duro...de verdad. De allí que pensáramos que lo mejor era comprar unas simples chips...
Y las apariencias como engañan!
Pues se ha convertido en nuestro "Restaurante-Chiringuito" predilecto! 
No tiene nombre, ni manteles, no tiene camareros, no tiene casi de nada...
El secreto? No tener patatas chips pero sí tener un huerto, arrancar las patatas de la tierra y tener que pelar, cortar y freírlas al momento.
Y lo mismo pasa con todos sus productos, verduras, hortalizas, frutas...hasta gallinas!
Eso sí necesitas ir con tiempo...
Platos llenos de consciencia, de aroma, color 
pero sobre todo de gusto...

Y ya son muchos los restaurantes que empiezan a cultivar sus propios productos. 
Sus propios huertos. 
Que genial idea!!

Beirut Festival Cooking

En Beirut se celebra el segundo "Beirut Festival Cooking".



Serán tres sabrosos días donde podrás acudir para aprender recetas de la mano de los chefs más conocidos, conocer las nuevas tendencias culinarias, los nuevos equipamientos que están en el mercado, podrás participar en degustaciones de comida, vino y aceite, es decir no sólo es un salón alimentario, está pensado para la participación de los asistentes! 
Además puedes ir con tus hijos y que ellos también participen. Hay talleres especiales para ellos! 

Me gusta ver que en mi país, aunque es pequeño, es pionero en los eventos gastronómicos dentro del mundo árabe. Porque si hay algo que a los libaneses nos gusta...es comer y disfrutar de la gastronomía.

Ferran Adria in trouble

Uno de los grandes, está en apuros. Y es que a Ferrán Adrià y a su socio se les reclama más de diez millones de euros!! 




Se les acusa de haber "estafado" a su antiguo socio por haber comprado su parte del negocio a un precio de risa. La palabra "estafa" entra porque el socio de ellos padece una     enfermedad mental y podían haberse aprovechado de ello. 

Siempre he seguido la trayectoria de Ferrán Adrià. Como Chef, me gusta y me alucina. La noticia puede ser muy perjudicial para su imagen, podría parecer que Ferrán Adrià es una persona con falta de ética y moral. Y desde luego podría ser así. 

Aunque para mi, este hecho no desmerecería todo su trabajo ni todas sus investigaciones. 
Pero es lo que tiene estar en lo alto, que sale a la luz todo lo que pasa a tu alrededor...bueno peor, sale el proceso de todo lo que pasa a tu alrededor...

One of the greatest, is in trouble. And is that Ferran Adrià and his partner are sued for more than ten million euros!




They are accused of having "defrauded" his former partner for buying his share of the business at a bargain price. The word "fraud" is because the partner them is mentally ill and they could have taken advantage of it.

I've always followed the trajectory of Ferran Adrià. As Chef, I like and I hallucinate with him. The news can be very damaging to his image, it might seem that Ferran Adrià is a person with absence of ethics and morals.

Although for me, this does not detract from all his work and all his research.

But is what you have being on top, it comes to light everything that happens around you ... well worse..so comes out the process of everything that happens around you ...

A food photography book!!

Ha llegado a mis manos este libro...
suerte que es viernes y tengo el fin de semana para ojearlo. 



Ya sabéis de mi pasión por las fotos de comida 
(aunque yo sea un auténtico desastre haciéndolas)
 Pero nunca es tarde. 

Un libro muy interesante
No sólo se queda en la belleza de la imagen
También te da los consejos (a nivel usuario) para mejorar tus fotografías de comida.
 Todo en  simples pasos 
(claro que primero he de acordarme la camera..)

Así es que tengo ganas de que sea sábado para poder empezar a saborear este libro!

The five senses

Hay dos tipos de personas a la hora de comer, los que comen sólo por alimentarse y los que disfrutan comiendo. 

Para mi es raro entender al primer grupo. Como se puede ser apático a la hora de comer? 
Es un momento en que los cinco sentidos se ponen a trabajar! 

El sentido de la vista, momento que examinas el plato, la armonía visual que tiene, los colores, las formas...yo recuerdo de pequeño que mi madre me decía "no comas por los ojos"...porque era capaz de sin tener hambre pedir más.

El sentido del olfato, momento glorioso. Como llega el olor de los alimentos y condimentos utilizados. 

Sentido del tacto, que con él identificamos las diferentes texturas y calor de los alimentos. 

Sentido del oído, sí sí también, porque por ejemplo el sonido de ciertas texturas son distinguidas por el oído. Por ejemplo pasa con los crujientes. 

El gusto, sin duda el más importante de los sentidos en la mesa. Nos permite distinguir los sabores y gustos. El equilibrio y la armonía de todos los elementos del plato. La intensidad de cada uno de los productos. 

Todos los sentidos envían nuestras sensaciones al cerebro, y es él que determina si nos crea placer o no lo que estamos degustando. 

Por eso me pregunto, que es lo que falla cuando una persona no disfruta aún comiendo la mayor exquisitez en la mesa?

There are two types of people around the table to eat, the first one eats only to survive and the other is the people that enjoy when eats.

To my understanding it is rare to the first group. How can be apathetic when it comes to eating?
It is a time when the five senses are put to work!

The sense of sight, when you examine the dish, the colors, the shapes, you want to find the armony ... I remember when I was young that my mother told me "do not eat with the eyes" ... 

The sense of smell, glorious moment. As can you smell food and condiments used.

Sense of touch, which he identified with the different textures and hot food.

Sense of hearing, because for example the sound of certain textures are distinguished by ear. For example with crispy food.

Taste, arguably the most important of the senses in the table. We can distinguish the flavors and tastes. The balance and harmony of all elements of the dish. The intensity of each of the products.

All our senses send sensations to the brain, and it is who determines whether or not we have pleasure when we're tasting.

So I wonder, what goes wrong when a person does not enjoy eating also the most exquisite food on the table?

I'm optimistic

Una vez más Líbano en el ojo del huracán, 
Tiempos difíciles.

Queremos una tierra libre de conflictos. 
Difícil. 
No imposible. 

Empieza una nueva semana, 
perfecta para olvidarnos
de los que quieren desestabilizar el país. 

Rabia. 
Dolor. 
Angustia. 

No solo por los conflictos,
también por los daños colaterales. 

Restaurantes cerrados, 
hoteles desocupados, 
trabajo escaso. 

Pero soy optimista. 
Porque soy libanés.

We want a world free of conflict.

Difficult.
Not impossible.


Start a new week,
perfect to forget
of those who want to destabilize the country.


Rage.

Not only by conflict,
also collateral damage.


Restaurants closed,
hotels unemployed,
no work.


But I'm optimistic.
Because I'm Lebanese.

Things...

Todos tenemos una pasión (o deberíamos tenerla) 
Hoy compartiré un poco de la mía. Guardo todas las imágenes de comida que me transmiten sencillez. 
Me gustan las imágenes de gastronomía cotidiana. 
Supongo que es porque en mi trabajo a veces es todo lo contrario.
Me gusta la sencillez y la elegancia de un simple croissant. 


Tengo debilidad por las personas apasionadas. 
Porque pueden hacer de lo cotidiano algo inmensamente especial.


Porque sin pasión no hay triunfo.

The Hispanic Day in Lebanon

Lunes...sin duda el día más duro de la semana.

Más después de un fin de semana intenso. Pero dicen que "sarna con gusto no pica"...
No picará...pero cansa!! jajaja.

Estuvimos en la celebración del día de la hispanidad en la embajada española de Líbano. 
Nueva embajadora, nuevas caras. Parece mentira que en un país tan pequeño como Líbano haya tantos españoles! 

Pues todos reunidos disfrutamos de un día especial. Donde la cultura española y la gastronomía fueron los primeros en llegar. 

Aquí os dejo algunas fotos, los que seguís el blog sabéis porque me dediqué a la cocina y no a la fotografía, y los que no me habéis leído antes, ahora lo descubriréis! (jajaja)

Monday ... definitely the hardest day of the week.

More after an intense weekend. But they say "Doing something you enjoy is never a chore"  ... but tired! lol.

We went to the celebration of Hispanic Day in the Spanish Embassy in Lebanon.
New ambassador, new faces. It seems incredible that in a country as small as Lebanon has many spanish people !

For all assembled enjoyed a special day. Where the Spanish culture and cuisine were the first to arrive.
